If your goal is to reproduce actual instrument sounds, you need to limit what you do on the VST. Certainly, a VST doesn't constrain things the same way an actual instrument does plenty of stuff is possible that wouldn't be on the actual instrument. The fact that bad (and/or unrealistic) articulations are possible does not mean that good (i.e. If there are articulations you hear done on a VST that sound bad to you, don't do them. I'm not sure why anyone expects you could get high quality sax sounds from a VST without using a breath controller, and even then it will take time to develop technique, though much easier than playing an actual woodwind instrument. Using something like Swam VST, on the other hand, is likely to get a lot of people close with a lot less effort.
